Chile's coastal Casablanca Valley is an upcoming region that produces some killer Sauvignon Blanc. The steady supply of cool, ocean air makes sure of that. It's also what drew winemaker Grant Phelps to the scene from New Zealand (a bona fide Sauv Blanc heaven).
